Clean Eating Blueberry Pancakes
1/2 cup old fashioned rolled oats
1/2 teaspoon baking powder
1/2 plain greek yogurt
1/2 medium ripe banana
1 egg
1/2 teaspoon vanilla (I use Mexican Vanilla)
1/2 cup frozen blueberries (you can use fresh if you have)
1 tablespoon Almond Meal
1 tablespoon Flax Seed
Coconut Oil
Pure Maple Syrup or Raw Honey for serving
Pour everything into a blender and blend up. While blending, heat enough coconut oil in a pan to cook the pancakes in. If it won't blend in your blender, add a little bit of milk (I use almond). One thing I found is if I add yogurt, egg, vanilla first and let it start blending then add in other ingredients.
Cook in pan like regular pancakes and serve!

Banana Muffin Whole Wheat Pancakes
I always try to find recipes that are good and healthy. This is a recipe I found on 100daysofrealfood.com and I modified it a little bit. I didn't count, but I would guess this made about 15 small/medium size pancakes.
Dry Ingredients:
2 cups whole wheat flour (I used Hodgson Mills)
2 tablespoons baking powder
1.5 tablespoons baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
Dash of nutmeg
Wet Ingredients:
1 cup unsweetened vanilla almond milk
1/2 cup buttermilk
1/2 teaspoon vanilla
1 tablespoon honey
2 large eggs
2 tablespoons applesauce
2 ripe bananas
Combine all the dry ingredients in a bowl then mix in the two milks.
Mash up bananas then combine with rest of wet ingredients.
Slowly pour wet ingredients into dry and mix together.
Pour onto heated pan or griddle (I use a ladle) and cook about 3-4 minutes per side.
Serve with your choice of toppings. My husband likes maple syrup and slithered almonds, my daughter and I used cream cheese and strawberries.
They also freeze well! I freeze on a baking pan for 2 hours then put into a freezer bag for easier storage.

Cream Cheese Pancakes
So, I started a diet a couple weeks ago and now I have some catching up to do with posting my new favorite low carb recipes. I joined Spark People and I love it. Easy to keep up with my daily intakes and some great recipes plus message boards.
This morning I made cream cheese pancakes, original recipe by Spark Member mainstreetalto.
2 ounces Cream Cheese, softened
1 large egg
1 tsp vanilla extract
2 pkts stevia
Dash of cinnamon
1 tbsp Smuckers Simply Fruit
Blend everything together (I didn't blend the fruit in, I used it as a topping instead). Spray a small non stick pan and heat on medium. Pour batter into pan and cover (I didn't have luck flipping mine so I covered and let cook until there wasn't anything left runny on top). Serve, it is good by it self or topped with fruit.
