Super easy TACO DIP!




I have made taco dip a few times within the past month and everyone is asking me for the recipe.  Its super easy and simple and takes only like 5 minute to assemble!  I don't go to Walmart often out of choice but I do love their Marketside Pice de Galo and guacamole.  The only picture I had is from my daughter's Halloween party at school so it had a spider web design from the cream cheese. 

I use my homemade taco seasoning but everything else is purchased from the store ready to go.

What do you need?
1 large can refried beans
1 container pico de galo
14 oz guacamole
2 tablespoons taco seasoning
1/2 cup shredded mexican cheese (estimate)
1 tablespoon sour cream

Mix together the taco seasoning and refried beans.  Smooth onto bottom of platter.  (I use the thin disposable cake pan).  Then a layer of guacamole.  Then the pico de galo.  Sprinkle entire top with cheese.  Put sour cream in a ziplock bag and cut a whole and squeeze on top of cheese.  Refrigerate until ready to serve.

Taco Seasoning


I've looked at a few different recipes online and came up with this. It taste great! Use about 2 tablespoons in place of a packet of taco seasoning. Stores great for a few months in an air tight container.

This recipe makes almost 1/2 cup of seasoning.

1/4 cup chili powder
1 tbsp tsp cumin
2 tsp onion powder
2 tsp garlic powder
1 tsp dried oregano
1 tsp salt
1 tsp pepper
1/2 tsp paprika
Dash of cayenne (use more if you like spice)

High Protien Flourless Chocolate Chip and Raisin Oatmeal Cookies

Okay, so the original recipe came from here but I modified it a bit and I accidentally left out the flour but, hey, less carbs and they are still good!


INGREDIENTS
(makes 24 cookies)

Dry ingredients

  • 2 cups Old Fashioned Rolled Oats
  • 2 scoops vanilla protein powder
  • 1 tbsp Flaxseed
  • 1 tbsp Wheat Germ
  • Dash of baking soda
  • Dash of baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 small box raisins
  • 2 tbsp dark chocolate chips

Wet ingredients

  • 1 cup unsweetened apple sauce
  • 2 eggs
  • 1 tsp pure vanilla extract
  • 2 tbsp maple syrup
Preparation:
  1. Preheat the oven to 350F
  2. In a large bowl, mix all the dry ingredients together.
  3. In a medium bowl, mix all the wet ingredients together.
  4. Add wet to dry and combine.
  5. Drop by tablespoons onto a sprayed cookie pan.
  6. Bake for about 15 minutes or until the cookies start to turn golden brown
  7. Cool before eating.

Mini Deep Dish Pizzas

Thanks to pinterest I've been wanting to try these and finally made them for lunch today. This recipe only makes 8 because I only had one pack of crescent rolls.Scroll down for recipe without pictures.

1 pack of garlic crescent rolls (missing from picture)
Approx 10 tablespoons of pizza sauce
1/2 pack of breakfast sausage cooked and broken up
Pepperoni (I used regular size turkey pepperoni but mini would probably work better)
Shredded Mozzarella cheese

Preheat oven to 375
Form rolls into a cupcake pan

Bake for 5 minutes
When you take out, use a spoon to reform into a bowl

Fill with sauce. I used about a tablespoon each
Add cooked sausage, pepperoni, and cheese


Bake another 10 minutes.

Recipe without pictures:

Green Citrus Tea




This is very easy!

DIY Citrus Green Tea with no added sweeteners!

1 green tea bag
2 cups water
1 very ripe and sweet orange (I usually use satsumas or tangerines)

Bring 2 cups of water to a boil. Turn off fire. Put tea bag in water for 2-3 minutes (no longer or gets bitter).
Squeeze orange into a large cup (white plastic cups from Raising Canes work great).
Fill with ice, pour tea in. Enjoy!

No need for any sweeteners :) My new favorite drink.

Baked Chicken with Potatoes and Asparagus

This was so easy and good! Even my 2 year old loved it.

Enough chicken breast for your family - I used 2 thick ones but cut each in half so ended up with 4
Bag of frozen asparagus spears
3 potatoes diced (fairly small so they cook in the right time)
EVOO
Salt, Pepper
Garlic Powder
Basil

Preheat oven to 400
Put chicken single layer in baking dish
Place asparagus around chicken on all 4 sides of baking dish
Place potatoes around chicken/on top of asparagus
Drizzle a little EVOO over everything
Sprinkle with salt, pepper, garlic powder, and basil
Cover with foil and bake covered for 45 minutes
Uncover and bake another 25 minutes

This dish was a combo of a few recipes. It was Chicken Capri, Roasted Broccoli, and a quick rice/pea combo I threw together. This went over well!

Chicken:
4-Boneless/Skinless chicken breast
1 tub ricotta cheese
A few slices provolone cheese
Garlic Powder
Salt
Black Pepper
Oregano
EVOO

Preheat oven to 425. Heat EVOO in a pan. Season chicken with garlic powder, salt, and pepper then cook each side about 5 mins in the EVOO. While cooking chicken, mix together ricotta cheese with some garlic powder, salt, pepper, and oregano. Put chicken in baking dish (I spray mine with EVOO no stick spray) then top each breast with equal parts of the ricotta mixture. Put a slice of cheese on top of ricotta. Bake 20 minutes or until chicken is done.

Broccoli:
1 bunch broccoli (I ate whole bunch myself so do more if you think you'll need it)
Minced Garlic
EVOO
Salt
Black Pepper
Parm Cheese

I didn't rince my broccoli because if damp, it won't crisp up in oven. Cut or break broccoli into nice size pieces. Put in gallon freezer bag with EVOO, minced garlic, salt, and pepper. Shake. Pour onto baking pan. Bake at 425 about 20 minutes. Top with parm cheese straight out oven. Serve right away.

Rice:
Ben's 10 minute brown rice
Frozen Peas
Chicken Broth
Garlic Powder
Oregano

Follow directions on box for rice but use chicken broth instead of water, put desired amout of peas in water as well as the garlic powder, oregano, salt (if desired) and black pepper. Cook per directions on rice.
